🍦 Healthy Banana Peanut Butter Ice Cream

Ingredients:

3 ripe bananas (sliced and frozen)

2 tablespoons natural peanut butter (unsweetened)

½ teaspoon vanilla extract (optional)

1–2 tablespoons almond milk (optional, if needed for blending)
Instructions:
1. Slice and Freeze Bananas:
Peel ripe bananas and slice into coins. Arrange slices on a parchment-lined tray and freeze for at least 2 hours or overnight.
2. Blend Ingredients:
In a blender or food processor, combine frozen bananas, peanut butter, and optional vanilla. Blend until smooth, scraping down sides as needed. Add almond milk if the mixture is too thick.
3. Serve or Refreeze:
For soft-serve texture, serve immediately. For firmer scoops, transfer to a container and freeze for an additional 1–2 hours.
4. Optional Toppings:
Top with crushed peanuts, dark chocolate shavings, sliced bananas, chia seeds, or coconut flakes.
Notes:
